I like that music, but he's overdoing it a bit, isn't he?

Having a stall at St Chartier in close proximity to gaita makers I can assure you that he is not playing fast - this is normal speed for a lot of Gaita players.
Basically it is practice, then practice some more with perhaps a bit of a practice in between these practices.

Well, not just the speed but the manic look on his face .

All very well if you spend your life playing but some of us live in the real world of going to university or earning a living and have to fit practicing in as and when we can.

I was planning on doing that fast tune on the borderpipes with a box player. I'll have to wait and see if we can do it that fast tho. :S

With regard to hyperspeed renditions of Irish dance music, I personally choose to play the music at a pace suitable for dancing. If I wanted to play faster, I'd have to give the dancers amphetamines :P

I'm not a fast piper, nor a slow piper... I'm a half-fast piper.

Yes, it's because he can. They look like a good show.

This performance isn't so 'over the top' far more melodic:

That was a good video. There is one moment when Liam O'Flynn turns and looks at the guitar player and smiles that is so piercing. And the music was really nice.

Sometimes pianists have sort of "virtuoso"pieces that show off how fast they can play or how something or other they can play. It's sort of fun but not something you'd want a steady diet of. I don't know if the ultra-fast piping is similar to that.

I've seen a couple of these "over the top" videos now with Carlos Nunez, and although the music is not up my alley, I must confess I am finding them to be really fun. All the shouting and dancing around is just sort of mesmerizing  . Oh dear!
