I am disappointed that the Hibernian tradition of chickpea dips was given less than short shrift, and a great and varied tradition it is: you have the solidly time-honored Hummus of Bandon, the Hummus of Ballyloughlin, the Hummus of Carrigaholt - to name but a few - and the mack-daddy of them all, the Hummus of Whiskey.

Sure you're not thinking of humus? No one can touch the Irish for humus, each town with its own earthy variety. I must say, the humus of whiskey has always puzzled me, though.
