Delrin should be fine when kept assembled. The one warning I'd give is that over time the cork will likely compress and need to be replaced if you keep it assembled. For a few years I played a Chieftain whistle with cork, and about 2 years in the cork was completely useless, and I had to use packing...

As long as it's a solid flute from a good maker and in good condition, it doesn't matter if it's new or used. Some people prefer wood to delrin, but both are fine options. Have you considered playing a tin whistle first? That is a cheaper and easier way to see if you like the whole six-holed instrum...
