I just now Googled "zaftig" ... That reminds me of my favorite "z" word: "Zarf". It's an ornamental metal holder used to hold coffee cups with no handle. Some may recognize the more ubiquitous, modern version, the "card zarf": http://1000words1000days.com/wp-...

I imagine that the off-centered thing might be because that person finds the angle it allows easier on their fingers.
One reason you might want to center it instead is to make it easier for you to control your embouchure.
