question: nutmeg

I cook a lot of Indian food, so use a lot of spices. I grind most of them -- cardamom, cumin, coriander, cinnamon, cloves . . . I have a coffee grinder with three cups, one of which I use to grind spices. It works great. A few years ago someone gave me a bottle of whole nutmegs. I don't bake much, s...

Re: corned beef

I think my big problem had been that I didn't have weights on the kraut, so it was hit-and-miss whether anything floated up to the top and did an aerobic fermentation. I recently got some glass weights designed for wide-mouth Ball Jars, and have successfully made kraut and pickles. Both a little sal...

Re: Aulos Stanesby Flute

Playing the baroque flute in tune is all about lipping. The embouchure needs to be small but VERY flexible. Pancelt's advice about rolling the flute is good, as is the alternate fingering from Fintano. After years of playing, I do all the adjustment of the attack angle by directing the airstream rat...

Re: Somers flute blows flat

Is this your first Prattens type flute? Initially playing flat on a large hole/large bore flute is not uncommon for those coming from “smaller” flutes. This would be particularly true if you tend flat on those smaller flutes but don’t realize it because you have been adjusting with the slide. I nev...

Re: Wobbly embouchure due to sweating (and how to deal with it?)

I generally wear a beard in the winter but not the summer. Like others, I feel that the beard definitely helps the flute from sliding on my lower lip. But I can't stand having a beard in the hot humid mid-Atlantic summer. So I wear a soul patch year round. Keeps the rest of my face from sweating in ...

Re: corned beef

Just got a kit with fermentation locks, weights, and a masher for making kraut. I'll start tomorrow.

I've tried natural pickles a few times with no success, so I'll try those too.

Re: Somers flute blows flat

The seller got back to me, and he didn't notice the flute blowing flatter than any of his other flutes, so either he subconsciously adjusted something, or it's just me. Is this your first Prattens type flute? Initially playing flat on a large hole/large bore flute is not uncommon for those coming f...

I guess once he heard the Pennywhistle Sessions, he figured the shak was the next logical progression. ; )

corned beef

I wanna give a shout out to Ben, who had a thread a few years ago about making reuben sandwiches from scratch. That motivated me to start corning my own beef. The stuff in the store is too fatty for me, so I start with eye round, which isn't a great cut of meat for most purposes, but makes wonderful...

Re: Flute Moisture

I'm a wet player. Irish flute, baroque flute, whistle, heck even when I played the clarinet. I've been playing flute for 20 years and don't expect to outgrow it. I pre-warm the head of whatever I'm playing. A few minutes under my arm warms it up nicely. I swab the head out after about 5 minutes of p...

Re: Flute Weights Sticky

Thanks for adding those guys. Bet you’re having fun with that C foot Charlie! It's fun and frustrating at the same time. I have very little experience with 8-keys, and those were all Rudall-Rose style (or whatever the word is for that), while this is Boehm-style. I MUCH prefer Aaron's design, but i...

Re: Double hole whistles?

The double holes on a recorder have a flat space to make it easy to cover one and not the other. This isn't possible on a whistle, which has a much thinner wall. The answer on the whistle is to half-hole the Eflat. The hole is generally large enough that with just a little practice doing that is ju...
